Ingredients

For the Lemon Garlic Butter Chicken:

  • 4 boneless, skinless chicken breasts
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • ½ tsp paprika
  • Zest and juice of 1 lemon
  • 3 tbsp unsalted butter
  • Fresh parsley, chopped, for garnish

For the Sautéed Green Beans:

  • 1 lb (450g) fresh green beans, trimmed
  • Salt, to taste
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • Juice of ½ lemon
  • Salt and pepper, to taste

Instructions

1. Cook the Chicken:

  • Season chicken breasts with salt and pepper.
  • Heat olive oil in a large skillet over medium-high heat.
  • Sear chicken for 6–7 minutes per side, or until golden brown and fully cooked through.
  • Remove chicken from skillet and set aside.

2. Make the Lemon Garlic Butter Sauce:

  • In the same skillet, add minced garlic, oregano, thyme, and paprika. Sauté for about 1 minute until aromatic.
  • Stir in lemon zest and juice.
  • Reduce heat and add butter, stirring until melted into a silky sauce.
  • Return the chicken to the skillet, spoon sauce over top, and simmer 2–3 more minutes.

3. Sauté the Green Beans:

  • While the chicken is cooking, blanch green beans in a pot of salted boiling water for 3–4 minutes. Drain and set aside.
  • In another skillet, heat olive oil over medium heat. Add minced garlic and sauté until fragrant, about 1 minute.
  • Add green beans, lemon juice, salt, and pepper. Toss and sauté for 2–3 minutes until warmed through and flavorful.

4. Serve:

  • Plate each chicken breast with a generous spoonful of the lemon garlic butter sauce.
  • Serve green beans on the side.
  • Garnish the chicken with fresh parsley for a pop of color and freshness.
