✅ 4 medium potatoes, peeled and sliced or cubed
✅ 1 onion, chopped
✅ 250g spinach, washed and roughly chopped
✅ 4 eggs
✅ 100g soft cream cheese
✅ 150g hard mozzarella cheese, grated
✅ 2 tbsp olive oil
✅ Salt to taste
✅ Ground black pepper to taste
✅ 1/2 tsp dried ground garlic

Instructions:
1️⃣ Preheat & Prep: Preheat your oven to 375°F (190°C). Grease a 9×9-inch (or similar) baking dish with a bit of olive oil.
2️⃣ Cook the Potatoes: In a large pot, boil the sliced or cubed potatoes in salted water for 8-10 minutes until just tender but not falling apart. Drain and set aside.
3️⃣ Sauté the Veggies: Heat 2 tbsp olive oil in a large skillet over medium heat. Add chopped onion and cook until soft and translucent, about 5 minutes. Add the chopped spinach and cook until wilted, about 2-3 minutes. Season with salt, black pepper, and dried garlic.
