Ingredients

  • 1.5 kg (3.3 lbs) lamb ribs, cut into pieces

  • 2 tsp ground cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder (optional, for heat)
  • 1 tsp ground coriander
  • Salt & pepper, to taste
  • 1 tbsp tomato paste
  • 1 cup beef or chicken stock
  • Juice of 1 lemon

Instructions

  1. Preheat Oven:
    Preheat your oven to 160°C (320°F).
  2. Sear the Ribs:
    Heat 3 tbsp olive oil in a deep roasting pan or large oven-safe skillet over medium-high heat.
    Season the lamb ribs with salt, pepper, cumin, smoked paprika, chili powder (if using), and ground coriander.
    Sear the ribs on both sides until golden brown, about 3–4 minutes per side. Remove and set aside.
  3. Build the Flavor:
    In the same pan, sauté the sliced onion and garlic cloves until golden and fragrant, about 5 minutes.
    Stir in 1 tbsp tomato paste and cook for 1 minute. Add the green chilies or bell peppers, then return the seared ribs to the pan.
  4. Braise:
    Pour in 1 cup stock and lemon juice. Cover the pan tightly with foil or a lid.
    Transfer to the oven and braise for 2.5–3 hours, or until the ribs are tender and falling off the bone.
  5. Finish:
    Optional: Uncover the pan and switch the oven to broil (grill). Broil for 5–10 minutes to caramelize the top of the ribs.
    Spoon the garlicky oil and pan juices over the ribs before serving.
