Easy Raisin Bundt Cake

Fluffy, golden, and kissed with sweetness—this Raisin Bundt Cake is the kind of cozy bake that fills your kitchen with the smell of comfort. It’s the kind of cake you whip up on a quiet afternoon, serve with tea or coffee, and sneak slices of for breakfast the next morning.

Made with simple pantry ingredients and no-fuss prep, this moist and tender cake is studded with sweet raisins and lightly dusted with powdered sugar for the perfect finishing touch.

Ingredients:

  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt
  • ½ cup vegetable oil
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • 1 tsp vanilla extract
  • ½ cup raisins
  • A pinch of salt
  • Powdered sugar (for dusting, optional)

Instructions:

1. Prep the Oven & Pan

Preheat your oven to 180°C (350°F). Lightly grease a bundt cake pan with butter or oil, making sure to get into all the nooks.

2. Whip the Base

In a large bowl, beat the eggs and sugar together until light, fluffy, and slightly pale—this gives your cake that lovely airy texture.

3. Add the Wet Ingredients

Whisk in the yogurt, vegetable oil, and vanilla extract until the mixture is smooth and well combined.

4. Incorporate the Dry Ingredients

Sift in the flour, baking powder, and salt. Stir gently until no dry spots remain.

5. Fold in the Raisins

Gently fold in the raisins, making sure they’re evenly distributed without overmixing.

6. Bake

Pour the batter into your prepared bundt pan. Bake for 35–40 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool & Serve

Let the cake cool in the pan for 10 minutes, then turn it out onto a rack to cool completely. Dust with powdered sugar just before serving for an extra touch of charm.

Tips & Variations:

  • Soak the raisins in warm water or rum for 10 minutes before baking for extra plumpness.
  • Add a dash of cinnamon or lemon zest for a flavor boost.
  • Swap raisins for dried cranberries or chopped dates if you like!

Storage:

Store the cake covered at room temperature for up to 3 days, or refrigerate for up to 5 days. It also freezes beautifully—just wrap slices individually.

Perfect for teatime, brunch, or anytime you want something sweet and simple.
