Lemon Blueberry Loaf Recipe

Ingredients

For the Loaf:

  • 1 ½ cups + 1 tbsp all-purpose flour
  • 2 tsp baking powder
  • ½ tsp salt
  • 3 large eggs
  • 1 cup granulated sugar
  • 1 cup plain yogurt or sour cream
  • ½ tsp vanilla extract
  • ½ cup vegetable oil
  • 2 tsp lemon zest
  • 1 ½ cups fresh or frozen blueberries

For the Lemon Glaze:

  • 1 cup sifted confectioner’s sugar
  • 2–3 tbsp fresh lemon juice

Instructions

  1. Preheat and Prep: Preheat your oven to 350°F (175°C). Grease the sides and bottom of a standard loaf pan.
  2. Combine Dry Ingredients: In a medium bowl, sift together 1 ½ cups flour, baking powder, and salt. Set aside.
  3. Mix Wet Ingredients: In a large bowl, whisk together eggs, granulated sugar, yogurt (or sour cream), vanilla extract, vegetable oil, and lemon zest until smooth.
  4. Combine Wet and Dry: Gradually add the dry ingredients to the wet mixture, stirring until just combined.
  5. Prepare Blueberries: In a small bowl, toss blueberries with 1 tbsp flour to coat (this prevents sinking). Gently fold the blueberries into the batter.
  6. Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 50–55 minutes, or until a toothpick inserted into the center comes out clean.
  7. Cool: Let the loaf cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely.
  8. Make the Glaze: In a small saucepan over low heat, combine confectioner’s sugar and 2 tbsp lemon juice. Stir until smooth, adding more lemon juice if needed for a pourable consistency.
  9. Glaze and Serve: Drizzle the glaze over the cooled loaf. Slice and enjoy!

  • If using frozen blueberries, do not thaw them to avoid excess moisture.
