Ultimate Patty Melt with Secret Sauce

Crispy. Cheesy. Saucy. This classic diner favorite gets the homemade treatment with caramelized onions, melty Swiss, and a tangy secret sauce that takes things way over the top. The Ultimate Patty Melt is everything you love about a burger and grilled cheese—smashed together into one soul-satisfying bite.
Whether you’re whipping it up for a weekend lunch or a casual dinner, this one’s guaranteed to steal the show. And yes, you need that sauce.
Ingredients (Serves 4)
For the Patty Melt:
- 1 lb ground beef
- 8 slices rye bread
- 8 slices Swiss cheese
- 1 large onion, thinly sliced
- 4 tbsp butter, plus more for spreading
- Salt and pepper, to taste
For the Secret Sauce:
- ½ cup mayonnaise
- 2 tbsp ketchup
- 1 tbsp relish
- 1 tsp Worcestershire sauce
- ½ tsp garlic powder
- ½ tsp onion powder
- Salt and pepper, to taste
Instructions:
1. Make the Secret Sauce
In a small bowl, stir together all the sauce ingredients. Taste and adjust seasoning as needed. Set aside—try not to eat it by the spoonful!
2. Caramelize the Onions
In a skillet over medium heat, melt 1 tbsp of butter. Add the sliced onions, season with salt and pepper, and cook until deeply golden and caramelized, about 10–15 minutes. Remove from skillet and set aside.
3. Shape & Cook the Patties
Form the ground beef into 4 oval patties, slightly larger than your bread slices (they’ll shrink a bit while cooking). Season generously with salt and pepper.
In the same skillet, cook patties over medium heat, about 4 minutes per side for medium doneness. Set aside.
4. Assemble the Sandwiches
Butter one side of each slice of rye bread. On the unbuttered side, spread a generous layer of the secret sauce.
Layer as follows:
- 1 slice of Swiss
- 1 beef patty
- Caramelized onions
- Another slice of Swiss
- Top with the second slice of bread (buttered side out)
5. Grill Until Golden
Wipe out the skillet and heat over medium. Cook the sandwiches until golden brown and crisp on both sides and the cheese is melty—about 3–4 minutes per side. Press down slightly with a spatula for that perfect diner-style crust.
