Craving a decadent dinner that feels like a night out—but from the comfort of your own kitchen? This duo of perfectly seared ribeye steaks and creamy, cheesy scalloped potatoes is a match made in comfort food heaven. It’s hearty, luxurious, and surprisingly easy to whip up for a special dinner.

Ingredients

For the Ribeye Steaks:

  • 2 ribeye steaks (about 1 inch thick)
  • 2 tbsp olive oil
  • Salt and freshly ground black pepper, to taste
  • 2 cloves garlic, minced
  • 1 sprig fresh rosemary or thyme (optional but flavorful)

For the Cheesy Scalloped Potatoes:

  • 4 large potatoes, peeled and thinly sliced
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 cup milk
  • 1 cup heavy cream
  • 1 ½ cups shredded sharp cheddar cheese
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • ¼ tsp paprika (optional, for a hint of smokiness)

Instructions

Step 1: Prepare the Cheesy Scalloped Potatoes

  1. Preheat your oven to 375°F (190°C) and grease a baking dish.
  2. In a medium saucepan, melt the butter over medium heat. Add onion and cook until softened, about 3-4 minutes.
  3. Stir in garlic and cook for another 30 seconds to 1 minute.
  4. Whisk in the flour and cook for 1-2 minutes to eliminate the raw taste.
  5. Gradually whisk in the milk and heavy cream. Cook, stirring constantly, until the sauce thickens slightly—about 5 minutes.
  6. Remove from heat and stir in the cheddar and Parmesan until smooth and melty. Season with salt, pepper, and paprika if using.

Step 2: Assemble & Bake

  1. Layer half of the sliced potatoes in the prepared dish and pour half the cheese sauce over them.
  2. Repeat with remaining potatoes and sauce.
  3. Cover with foil and bake for 45 minutes.
  4. Remove foil and bake another 15 minutes, until golden and bubbly.
  5. Let rest for 5-10 minutes before serving.

Step 3: Cook the Ribeye Steaks

  1. Pat the steaks dry and season generously with salt and black pepper.
  2. Heat olive oil in a cast iron or heavy skillet over medium-high heat.
  3. Sear the steaks for 4-5 minutes per side (for medium-rare), adjusting based on your preferred doneness.
  4. In the last minute of cooking, add minced garlic and rosemary or thyme, basting the steaks with the garlicky oil.
  5. Let the steaks rest for 5 minutes before slicing to lock in juices.

Serve It Up

Plate your juicy ribeye steaks alongside a generous scoop of cheesy scalloped potatoes, and prepare to swoon. Add a crisp green salad or roasted green beans for a complete, steakhouse-style experience at home.

Tips & Swaps:

  • Want extra golden potatoes? Broil the top for the last 2 minutes!
