Ingredients
- 1 cup cherry tomatoes, halved
- ½ cup sun-dried tomatoes, chopped
- 4 oz cream cheese, softened
- ½ cup ricotta cheese
- ½ cup shredded mozzarella
- 2 tablespoons grated Parmesan
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- ¼ cup fresh basil, chopped
- Salt and black pepper, to taste
- Balsamic glaze, for drizzling
- Crostini or baguette slices, for serving
Instructions
1. Preheat the Oven
Set your oven to 375°F (190°C) so it’s ready to bake your dip to bubbly perfection.
2. Sauté the Tomatoes & Garlic
In a skillet over medium heat, warm the olive oil and add the minced garlic. Sauté for about 1 minute, just until fragrant.
Add in the cherry tomatoes and chopped sun-dried tomatoes. Season with salt and pepper, and cook for 4–5 minutes, stirring occasionally, until the tomatoes begin to soften. Remove from heat.
3. Mix the Cheesy Base
In a mixing bowl, combine the cream cheese, ricotta, mozzarella, and Parmesan. Stir until smooth and well blended.
4. Assemble the Dip
Spread the cheese mixture evenly into a small baking dish. Spoon the warm tomato mixture over the top.
5. Bake
Bake for 20 minutes, or until the cheese is melted, bubbly, and golden around the edges.
6. Garnish and Serve
Let the dip cool slightly for 5 minutes. Then sprinkle with freshly chopped basil and drizzle with balsamic glaze.
Serve warm with toasted crostini or slices of crusty baguette for scooping.
