Ingredients:

For the Biscuit:

  • 6 eggs
  • 1 pinch of salt
  • 180 g sugar
  • 1 tablespoon vanilla sugar
  • 100 g flour
  • 80 g cornstarch
  • 1 packet vanilla custard powder
  • 1 teaspoon baking powder

For the Milk Mixture:

  • 120 ml milk
  • 1 tablespoon sugar
  • 1 tablespoon cocoa powder
  • 1 cup espresso (cold)
  • 1 shot Amaretto

For the Cream:

  • 250 g mascarpone
  • 250 g quark (20% fat)
  • 60 g sugar
  • 1 packet vanilla sugar
  • 1 shot Amaretto
  • 2 tablespoons eggnog
  • 100 g dark chocolate shavings
  • 600 ml heavy cream
  • 2 tablespoons sour cream
  • Cocoa powder for dusting

For Decoration:

  • 50 g chocolate shavings
  • Chocolate Zebra Rolls

Instructions:

1️⃣ Bake the Biscuit:

  1. Preheat oven to 190°C (375°F).
  2. Separate eggs. Beat egg whites with salt until firm, gradually adding sugar.
  3. Stir in egg yolks gently.
  4. Mix flour, cornstarch, custard powder, and baking powder, then fold into the egg mixture.
  5. Pour batter into a cake ring and bake at 180°C (350°F) for about 30 minutes.
  6. Let the biscuit cool completely.

2️⃣ Prepare the Milk Mixture:

  1. Heat milk with sugar and cocoa powder.
  2. Stir in espresso and Amaretto, then let it cool.

3️⃣ Make the Cream:

  1. Mix mascarpone, quark, sugar, and vanilla sugar until smooth.
  2. Beat heavy cream until stiff, then fold into the mascarpone mixture.
  3. Stir in Amaretto, eggnog, and chocolate shavings.

4️⃣ Assemble the Cake:

  1. Slice the biscuit into three layers.
  2. Brush each layer with the milk mixture.
  3. Alternate layers of cake and cream, refrigerate for at least 3 hours.

5️⃣ Decorate:

  1. Coat the cake with the remaining cream.
  2. Sprinkle with chocolate shavings and dust with cocoa powder.
  3. Pipe rosettes and decorate with Chocolate Zebra Rolls.
