Ingredients

For the Chicken Meatballs:

  • 1 pound ground chicken
  • Salt and pepper (to taste)

For the Coconut Curry Sauce:

  • 14 oz coconut milk
  • 2 tbsp red curry paste
  • 1 tbsp fish sauce
  • 1 tsp brown sugar
  • 1 garlic clove, minced
  • ½ onion, finely chopped
  • Fresh cilantro (for garnish)
  • Sliced chili (optional, for extra heat)

To Serve:

  • Cooked rice
  • Oil (for browning the meatballs)

Instructions

1️⃣ Prepare the Meatballs

In a bowl, season the ground chicken with salt and pepper.
Shape the mixture into small meatballs, about 1–2 inches in diameter.

2️⃣ Brown the Meatballs

Heat a little oil in a skillet over medium-high heat.
Add the meatballs and cook, turning occasionally, until browned on all sides. Remove from the skillet and set aside.

3️⃣ Make the Coconut Curry Sauce

In the same skillet, add the red curry paste and sauté for 1–2 minutes, allowing it to release its aromas.
Pour in the coconut milk, stirring to combine.
Add fish sauce and brown sugar, then bring the sauce to a simmer. Let it cook for about 3-4 minutes.

4️⃣ Simmer the Meatballs in the Sauce

Return the browned meatballs to the skillet with the curry sauce. Let them simmer in the sauce for about 10–12 minutes, or until cooked through and tender.

5️⃣ Garnish and Serve

Top with fresh cilantro and sliced chili if desired.
Serve the meatballs and curry sauce over a bed of cooked rice.

Serving Suggestions

Pair this dish with a side of steamed vegetables or crispy spring rolls to round out your meal. For a twist, try adding pineapple chunks to the curry sauce for a tropical zing!

Pro Tip

For extra flavor, marinate the chicken meatballs in a bit of soy sauce and lime juice before cooking! You can also switch the chicken for turkey or tofu for a different take.
