Ingredients
- 4 boneless chicken breasts, skin on
- Grated zest and juice of 1 unwaxed lemon
- 1 tablespoon clear runny honey
- 1 tablespoon olive oil
- 2 cloves garlic, peeled and chopped
- 1 teaspoon oregano
- Salt and pepper, to taste
Instructions
- Preheat your oven to 190°C (375°F) or gas mark 5.
- Arrange the chicken breasts in a baking dish with the skin side facing up. Season them generously with salt and pepper.
- In a small bowl, combine the lemon juice, lemon zest, oregano, honey, olive oil, and chopped garlic. Heat the mixture in the microwave for about 30 seconds, then stir well to combine.
- Pour the warm mixture over the chicken breasts.
- Bake in the preheated oven for 30 minutes, basting the chicken every 10 minutes to build a beautiful sticky glaze as the juices thicken. The chicken is done when the juices run clear and it’s cooked through.
- Remove from the oven and let the chicken rest for 5 minutes before serving.
