Sticky Lemon Chicken

Ingredients

  • 4 boneless chicken breasts, skin on
  • Grated zest and juice of 1 unwaxed lemon
  • 1 tablespoon clear runny honey
  • 1 tablespoon olive oil
  • 2 cloves garlic, peeled and chopped
  • 1 teaspoon oregano
  • Salt and pepper, to taste

Instructions

  1. Preheat your oven to 190°C (375°F) or gas mark 5.
  2. Arrange the chicken breasts in a baking dish with the skin side facing up. Season them generously with salt and pepper.
  3. In a small bowl, combine the lemon juice, lemon zest, oregano, honey, olive oil, and chopped garlic. Heat the mixture in the microwave for about 30 seconds, then stir well to combine.
  4. Pour the warm mixture over the chicken breasts.
  5. Bake in the preheated oven for 30 minutes, basting the chicken every 10 minutes to build a beautiful sticky glaze as the juices thicken. The chicken is done when the juices run clear and it’s cooked through.
  6. Remove from the oven and let the chicken rest for 5 minutes before serving.
