Spinach, Avocado & Egg Bowl with Roasted Sweet Potato 🥗

Ingredients

  • 2 cups fresh spinach or mixed greens
  • 1 ripe avocado, sliced
  • 2–3 large eggs
  • 1 medium sweet potato, sliced into rounds
  • 1 tbsp olive oil
  • Salt and black pepper, to taste
  • Crushed red chili flakes (optional, for a spicy kick)

Instructions

1. Roast the Sweet Potato

  1. Preheat your oven to 200°C (400°F).
  2. Toss sweet potato slices with olive oil, a pinch of salt, and black pepper.
  3. Spread evenly on a baking tray and roast for 20–25 minutes, flipping halfway, until golden and tender. Set aside.

2. Prepare the Jammy Eggs

  1. Bring a small pot of water to a rolling boil.
  2. Gently add eggs and boil for 7 minutes for perfectly jammy yolks.
  3. Immediately transfer eggs to a bowl of ice water for 5 minutes to stop cooking.
  4. Peel eggs carefully and slice in half.

3. Assemble the Bowl

  1. Create a base with fresh spinach or mixed greens in your bowl or container.
  2. Arrange roasted sweet potato slices on one side.
  3. Add sliced avocado for creamy goodness.
  4. Place halved jammy eggs on top.
  5. Finish with a sprinkle of salt, black pepper, and crushed red chili flakes for a touch of heat (optional).
