Spinach, Avocado & Egg Bowl with Roasted Sweet Potato 🥗

Ingredients
- 2 cups fresh spinach or mixed greens
- 1 ripe avocado, sliced
- 2–3 large eggs
- 1 medium sweet potato, sliced into rounds
- 1 tbsp olive oil
- Salt and black pepper, to taste
- Crushed red chili flakes (optional, for a spicy kick)
Instructions
1. Roast the Sweet Potato
- Preheat your oven to 200°C (400°F).
- Toss sweet potato slices with olive oil, a pinch of salt, and black pepper.
- Spread evenly on a baking tray and roast for 20–25 minutes, flipping halfway, until golden and tender. Set aside.
2. Prepare the Jammy Eggs
- Bring a small pot of water to a rolling boil.
- Gently add eggs and boil for 7 minutes for perfectly jammy yolks.
- Immediately transfer eggs to a bowl of ice water for 5 minutes to stop cooking.
- Peel eggs carefully and slice in half.
3. Assemble the Bowl
- Create a base with fresh spinach or mixed greens in your bowl or container.
- Arrange roasted sweet potato slices on one side.
- Add sliced avocado for creamy goodness.
- Place halved jammy eggs on top.
- Finish with a sprinkle of salt, black pepper, and crushed red chili flakes for a touch of heat (optional).
