Spicy Lemon-Pepper Salmon

Ingredients:
- 1-2 salmon fillets (approximately 1 1⁄2 lbs)
- 2 tbsp butter
- 1 tbsp oil (peanut or canola)
- Seasoning blend (jerk seasoning, lemon pepper, salt, pepper)
- Fresh lemon slices, for garnish
Instructions:
- Preheat your oven to 400°F (200°C).
- In a large pan, heat butter and oil over medium heat.
- Season the salmon fillets generously with a mix of jerk seasoning, lemon pepper, salt, and pepper.
- Place the salmon fillets in the pan, skin-side down, and cook for 4-5 minutes.
- Transfer the pan to the oven and bake for another 10-12 minutes, or until the salmon easily flakes when tested with a fork.
- Serve the salmon with fresh lemon slices for a burst of citrus.
