Spicy Lemon-Pepper Salmon

Ingredients:

  • 1-2 salmon fillets (approximately 1 1⁄2 lbs)
  • 2 tbsp butter
  • 1 tbsp oil (peanut or canola)
  • Seasoning blend (jerk seasoning, lemon pepper, salt, pepper)
  • Fresh lemon slices, for garnish

Instructions:

  1. Preheat your oven to 400°F (200°C).
  2. In a large pan, heat butter and oil over medium heat.
  3. Season the salmon fillets generously with a mix of jerk seasoning, lemon pepper, salt, and pepper.
  4. Place the salmon fillets in the pan, skin-side down, and cook for 4-5 minutes.
  5. Transfer the pan to the oven and bake for another 10-12 minutes, or until the salmon easily flakes when tested with a fork.
  6. Serve the salmon with fresh lemon slices for a burst of citrus.
