Perfect for busy evenings, this dish brings together everything you love: juicy, flavorful chicken, roasted potatoes with crispy edges, and a punchy kick from hot sauce and garlic. Minimal cleanup, maximum flavor!

Ingredients

For the Marinade:

  • 1/4 cup olive oil
  • 2 tablespoons hot sauce (Sriracha or your favorite)
  • 2 tablespoons low-sodium soy sauce
  • 1 tablespoon Dijon mustard
  • 1 tablespoon honey
  • 6 garlic cloves, minced
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste

For the Sheet Pan:

  • 4 bone-in, skin-on chicken thighs (or drumsticks if preferred)
  • 1½ pounds baby potatoes, halved or quartered
  • 1 tablespoon olive oil (for tossing the potatoes)
  • Salt and pepper, to taste
  • Chopped fresh parsley, for garnish (optional)

Instructions

1. Make the Marinade

In a bowl, whisk together olive oil, hot sauce, soy sauce, Dijon mustard, honey, garlic, smoked paprika, onion powder, salt, and pepper. The perfect balance of heat, sweetness, and umami!

2. Marinate the Chicken

Place chicken thighs in a large zip-top bag or bowl. Pour in half the marinade, making sure the chicken is fully coated. Cover and refrigerate for at least 1 hour, or overnight for deeper flavor.

3. Preheat the Oven

Preheat to 425°F (220°C). Line a large sheet pan with parchment paper or foil for easy cleanup.

4. Toss the Potatoes

In a separate bowl, toss the baby potatoes with the remaining marinade and 1 tablespoon olive oil. Season with a little extra salt and pepper.

5. Assemble the Sheet Pan

Arrange marinated chicken and seasoned potatoes on the pan in a single layer. Give them space so they roast beautifully.

6. Roast to Perfection

Bake for 40–45 minutes, or until the chicken reaches an internal temp of 165°F (74°C) and the potatoes are tender and golden brown.

Optional: Broil for 2–3 minutes at the end for crispy skin and caramelized potatoes.

7. Serve and Enjoy

Sprinkle with fresh parsley and serve hot — straight from the pan!

Recipe Notes & Tips

  • Chicken: Bone-in, skin-on gives the best flavor and crispy texture, but boneless thighs or breasts work too.
  • Spice Level: Adjust the hot sauce to your taste — or swap in sweet chili sauce for a milder version.
  • Make Ahead: You can marinate the chicken and potatoes up to 24 hours in advance.
