Ingredients
For the Dough:
- 1 cup (120 g) sourdough discard (unfed, room temp)
- 1 cup (125 g) all-purpose flour
- ½ tsp salt
- ¼ tsp garlic powder
- ¼ tsp smoked paprika (optional, for added depth)
- 3 tbsp cold unsalted butter, cut into small cubes
- 1 cup (100 g) shredded sharp cheddar cheese
- 2–3 tbsp cold water, as needed
For Topping:
- 1 egg, beaten (for egg wash)
- 2–3 tbsp everything bagel seasoning
Instructions
1. Make the Dough
In a food processor or mixing bowl, combine flour, salt, garlic powder, paprika, and butter. Pulse or rub the butter in with your fingers until the mixture resembles coarse crumbs. Add shredded cheddar and mix again.
Pour in the sourdough discard and stir until a rough dough forms. If the dough feels too dry, add cold water 1 tablespoon at a time until it just comes together.
2. Chill the Dough
Flatten the dough into a disc, wrap it tightly in plastic wrap, and refrigerate for 30 minutes. This helps the butter firm up for a flakier result and makes rolling easier.
3. Roll & Cut
Preheat your oven to 375°F (190°C). On a floured surface, roll the dough into a rectangle about 1/8 inch thick.
Brush with beaten egg and sprinkle generously with everything bagel seasoning. Using a pizza cutter or sharp knife, slice into strips about ½ inch wide and 5–6 inches long.
4. Twist & Bake
Carefully twist each strip and lay them on a parchment-lined baking sheet, leaving space between each. Bake for 15–18 minutes, or until golden, puffed, and crisp.
5. Serve & Snack!
Let them cool slightly before serving. Enjoy warm or at room temp with your favorite dips—sour cream & chive, spicy mustard, hummus, or even whipped feta.
