Smothered Hamburger Steak

Juicy ground beef patties seared to perfection and smothered in a rich, savory onion gravy—this classic comfort food dish is simple to make and full of hearty flavor. Perfect for a cozy weeknight dinner!

Ingredients (Serves 4)

For the Patties:

  • 1 lb ground beef (80/20 recommended for juiciness)
  • ¼ cup breadcrumbs
  • 1 large egg
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and black pepper, to taste

For the Gravy:

  • 2 tbsp olive oil (or use the pan drippings)
  • 1 large onion, thinly sliced
  • 1 cup beef broth
  • 1 tbsp Worcestershire sauce
  • 1 tbsp all-purpose flour (optional, for thickening the gravy)
  • Fresh parsley, chopped (for garnish, optional)

Instructions

  1. Prepare the patties
    In a large bowl, combine the ground beef, breadcrumbs, egg, garlic powder, onion powder, salt, and pepper. Mix gently until just combined—avoid overmixing to keep the patties tender.
    Divide the mixture into 4 equal portions and shape into oval patties (about ½-inch thick).
  2. Sear the patties
    Heat the olive oil in a large skillet over medium-high heat. Add the patties and cook for 4–5 minutes per side, until nicely browned and cooked through (internal temperature should reach 160°F/71°C). Remove the patties to a plate and set aside.
  3. Cook the onions
    In the same skillet (don’t wipe it out—those browned bits add flavor!), add the sliced onions. Reduce heat to medium and cook for 5–7 minutes, stirring occasionally, until softened and caramelized.
  4. Make the gravy
    Stir in the beef broth and Worcestershire sauce, scraping up any browned bits from the bottom of the pan. If you’d like a thicker gravy, sprinkle in the flour and whisk constantly for 1–2 minutes to cook out the raw flour taste. Bring to a simmer.
  5. Smother and simmer
    Return the hamburger patties to the skillet, nestling them into the gravy. Spoon some gravy over the top of each patty. Cover and simmer on low for 5–7 minutes to let the flavors meld and the patties absorb the gravy.
  6. Serve
    Garnish with chopped fresh parsley if desired. Serve hot with your favorite sides like mashed potatoes, rice, or green beans for the ultimate comfort meal!
