– 1 tbsp olive oil
– 1 onion, finely chopped
– 4 cloves garlic, minced
– 1 tbsp tomato paste – 6 cups beef broth
– 1 tbsp Worcestershire sauce
– 1 tsp dried thyme

*For the Garlic Cheese Toast:*
– 4 slices of crusty bread (like baguette or sourdough)
– 1 cup shredded Gruyère or mozzarella
– 1 tbsp fresh parsley, chopped
– 1 tbsp butter
– 1 clove garlic, minced
*Instructions:*
1️⃣ *Brown the Beef:* Heat olive oil in a large pot over medium-high heat. Season the beef with salt and pepper, then sear until golden on all sides. Remove and set aside. 2️⃣ *Build the Broth:* In the same pot, sauté onions and garlic until soft and fragrant. Stir in tomato paste, then pour in the beef broth and Worcestershire sauce. Add thyme, and return the beef to the pot. 3️⃣ *Slow Simmer:* Cover and let it cook over low heat for about 2.5 to 3 hours, until the beef is tender and falls apart easily.
