Slow-Cooked Shredded Beef with Creamy Mashed Potatoes & Cheesy Broccoli Casserole

Ingredients

For the Shredded Beef:

  • 2½ lb chuck roast
  • 2 tbsp olive oil
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 2 cups beef broth
  • 1 tbsp Worcestershire sauce
  • 2 tbsp soy sauce
  • 1 tbsp tomato paste
  • 1 tsp dried thyme
  • Salt and black pepper, to taste

For the Mashed Potatoes:

  • 2 lbs russet potatoes, peeled and cubed
  • ½ cup butter
  • ½ cup heavy cream
  • Salt and pepper, to taste

For the Cheesy Broccoli Casserole:

  • 1 lb broccoli florets (steamed until tender)
  • 1 cup shredded cheddar cheese
  • ½ cup sour cream
  • 1 can (10.75 oz) cream of mushroom soup
  • ½ cup breadcrumbs
  • 1 tbsp butter

For Garnish:

  • Fresh parsley, finely chopped

Instructions

1. Prepare the Shredded Beef

  • In a large pot or Dutch oven, heat olive oil over medium-high heat.
  • Sear the chuck roast on all sides until beautifully browned. Remove and set aside.
  • In the same pot, sauté the onion and garlic until fragrant and softened.
  • Add the beef broth, Worcestershire sauce, soy sauce, tomato paste, thyme, and season generously with salt and pepper.
  • Return the seared beef to the pot. Cover and simmer on low heat for 3–4 hours or slow cook on low for 6–8 hours until the beef is tender and easily shreds.
  • Shred the beef with two forks, stirring it back into the luscious gravy.

2. Make the Creamy Mashed Potatoes

  • Bring a large pot of salted water to a boil. Add cubed potatoes and cook until fork-tender, about 15–20 minutes.
  • Drain and return potatoes to the pot.
  • Add butter and heavy cream, mashing until smooth and fluffy.
  • Season with salt and pepper to taste.

3. Prepare the Cheesy Broccoli Casserole

  • Preheat your oven to 350°F (175°C).
  • In a large mixing bowl, combine the steamed broccoli, shredded cheddar cheese, sour cream, and cream of mushroom soup. Mix well.
  • Transfer the mixture into a greased casserole dish.
  • Sprinkle the top with breadcrumbs and dot with small pieces of butter.
  • Bake for 20–25 minutes, until bubbling and golden.

4. Assemble the Plate

  • Spoon a hearty helping of mashed potatoes onto your plate.
  • Top with tender shredded beef and plenty of rich gravy.
