Ingredients

Serves 4

  • 2 racks of lamb (frenched, about 16 oz each)
  • 4 cloves garlic, minced
  • 2 tbsp fresh rosemary, finely chopped
  • Salt and pepper, to taste
  • 1 tbsp olive oil
  • 1 cup red wine (Cabernet Sauvignon or Merlot work beautifully)
  • 1 cup beef broth
  • 2 tbsp unsalted butter

Instructions

1️⃣ Prep the Lamb

Preheat your oven to 400°F (200°C). Pat the lamb racks dry and season all over with salt, pepper, minced garlic, and chopped rosemary. Press the garlic and herbs firmly into the meat to create a fragrant crust.

2️⃣ Sear to Lock In Flavor

Heat olive oil in a large oven-safe skillet over medium-high heat. Sear the lamb racks for 2–3 minutes per side, until nicely browned. This step adds a rich, caramelized flavor.

3️⃣ Roast to Perfection

Transfer the seared lamb to a roasting pan (or leave in the oven-safe skillet) and roast for 20–25 minutes for medium-rare, or until a meat thermometer reads 125–130°F (52–54°C) in the center. Remove from the oven and let rest for 10 minutes before slicing into individual chops.

4️⃣ Make the Red Wine Sauce

While the lamb rests, return the skillet to medium heat (use the same pan with the lamb drippings). Deglaze with 1 cup red wine, scraping up all the flavorful browned bits. Stir in 1 cup beef broth and simmer for 8–10 minutes, or until the sauce reduces by half. Finish by whisking in 2 tbsp butter for a glossy, rich finish.

5️⃣ Serve and Impress

Arrange the lamb chops on a serving platter and drizzle with the red wine sauce. Garnish with fresh rosemary sprigs if desired.
