Roast Beef with Yorkshire Pudding and Creamy Gravy


A classic British-style feast with tender roast beef, velvety gravy, and all the trimmings!

Ingredients

For the Roast Beef:

  • 2 lb beef roast (sirloin or ribeye work beautifully)
  • 2 tbsp olive oil
  • Salt and black pepper, to taste

For the Gravy:

  • 2 tbsp butter
  • 2 cups beef broth
  • 1 cup heavy cream
  • 1 tsp Worcestershire sauce

For the Plate:

  • 1 cup mashed potatoes (prepared in advance)
  • 1 Yorkshire pudding (store-bought or homemade)
  • 4 roasted cherry tomatoes
  • 4 sautéed mushrooms
  • 1 grilled asparagus spear

Instructions

1. Preheat the Oven:
Set your oven to 375°F (190°C).

2. Prepare & Sear the Roast:
Pat the beef roast dry and rub all over with olive oil, salt, and black pepper.
In a hot pan, sear the beef on all sides, about 2–3 minutes per side, until you get a golden-brown crust.

3. Roast the Beef:
Transfer the seared roast to a roasting rack or oven-safe dish. Roast for 25–30 minutes for medium-rare (or adjust for your preferred doneness).
Let the beef rest for 10 minutes before slicing.

4. Make the Gravy:
Using the same pan from the sear, melt butter over medium heat. Add beef broth and scrape up the flavorful bits.
Stir in heavy cream and Worcestershire sauce, simmering for 5–7 minutes until thickened to a luscious gravy.

5. Warm the Sides:

  • Reheat the mashed potatoes and Yorkshire pudding if needed.
  • Sauté mushrooms until golden.
  • Roast or grill cherry tomatoes and asparagus until just tender.

6. Plate It Up:

  • Spoon mashed potatoes onto each plate and create a small well. Fill with warm gravy.
  • Add sliced roast beef over the potatoes.
  • Arrange the Yorkshire pudding, tomatoes, mushrooms, and asparagus around the plate.
  • Drizzle extra gravy over everything for that final indulgent touch.
