Ingredients:

  • 1/2 cup (80g) chia seeds
  • 1/4 cup (60ml) maple syrup (or agave nectar)
  • Zest of 1 large lime
  • Juice of 1/2 large lime (about 2 tbsp / 30ml)
  • 1 tsp (5ml) vanilla extract
  • Pinch of salt

Optional No-Bake Crust:

  • 1 cup (140g) almonds or cashews
  • 1/2 cup (45g) shredded unsweetened coconut
  • 1/4 cup (45g) Medjool dates, pitted
  • 1 tbsp (15ml) melted coconut oil
  • Pinch of salt

Topping:

  • Toasted coconut flakes
  • Extra lime zest

Instructions:

1️⃣ Make the No-Bake Crust (Optional but YUM!):

In a food processor, combine the almonds or cashews, shredded coconut, dates, coconut oil, and salt. Blend until the mixture starts clumping and sticks when pressed. Press it firmly into a parchment-lined 8×8 inch (20×20 cm) pan. Pop into the fridge to chill while you make the filling.

2️⃣ Whisk the Chia Pudding Filling:

In a medium bowl, whisk together the coconut milk, chia seeds, maple syrup, lime zest, lime juice, vanilla, and salt. Give it a solid whisk to prevent the seeds from clumping!

3️⃣ Let It Sit & Whisk Again:

Let the mixture rest for 5–10 minutes, then whisk again to break up any chia clumps and ensure even distribution.

4️⃣ Assemble & Chill:

Pour the chia mixture over the crust (or directly into the pan if going crustless). Spread it evenly, cover, and refrigerate for at least 4 hours, or overnight, until fully set and firm.

5️⃣ Top & Slice:
