For the Roasted Broccoli
- 2 cups fresh broccoli florets
- 1 tbsp olive oil
- Salt & pepper, to taste
- Optional: squeeze of lemon or sprinkle of chili flakes
For the Loaded Baked Potato
- 2 large russet potatoes
- Olive oil and coarse salt (for baking)
- ½ cup shredded cheddar cheese
- ¼ cup sour cream
- 2 slices cooked bacon, crumbled
- 2 tbsp chopped green onions or chives

Instructions
1️⃣ Prep & Bake the Potatoes
Preheat oven to 400°F (200°C).
Scrub potatoes and prick with a fork. Rub with olive oil and sprinkle with coarse salt.
