Ingredients
For the Chimichurri Sauce:
- ½ cup parsley, finely chopped
- 4 cloves garlic, finely minced
- 1 Fresno pepper, seeded and finely minced
- 1 teaspoon dried oregano
- ½ cup extra virgin olive oil
- 3 tablespoons red wine vinegar
- 1 teaspoon salt
- ½ teaspoon fresh ground pepper
For the Shrimp:
- 1 lb jumbo shrimp, peeled and deveined
- 3 tablespoons olive oil
- 2 cloves garlic, finely minced
- 2 tablespoons honey (mild flavor, like clover)
- 1 teaspoon smoked paprika
- 1 teaspoon salt
- ½ teaspoon fresh ground pepper
Instructions
Chimichurri Sauce:
- Finely chop parsley, garlic, and Fresno pepper with a sharp knife (avoid using a food processor for best texture). Place in a medium-sized bowl.
- Add dried oregano, salt, and pepper to the herb mixture.
- Stir in olive oil and red wine vinegar until well combined.
- Let the chimichurri sauce stand for at least 1 hour (or longer, if possible) to allow the flavors to meld.
Shrimp:
- Peel and devein the shrimp. In a bowl, combine olive oil, minced garlic, honey, smoked paprika, salt, and pepper. Add the shrimp and toss to coat. Cover and marinate in the refrigerator for 20 minutes.
- Heat a saucepan or grill pan over high heat. Once hot, add the marinated shrimp in a single layer. Cook for 2-3 minutes per side until opaque and slightly charred.
- Transfer the cooked shrimp to a serving dish. Spoon about ÂĽ cup of the chimichurri sauce over the shrimp and toss to coat.
- Serve the remaining chimichurri sauce in a ramekin or small bowl on the side.
Serving Suggestions
- Tacos: Stuff the shrimp into warm tortillas with your favorite toppings.
- Rice: Serve over a bed of fluffy rice for a hearty meal.
- Grilled Bread: Pair with crusty, grilled slices of bread to soak up the sauce.
