*Ingredients:*
– 150 ml milk
– 100 ml orange juice
– 40 g cornstarch
– 65 g sugar
– 2 egg yolks
– 2 tbsp orange zest
*Steps:*
*1️⃣ Prepare the Milk and Sugar Mixture:* In a pot, combine the milk, cornstarch, and half of the sugar. Heat gently, stirring constantly, until it’s almost boiling.
*2️⃣ Mix the Egg Yolks and Orange Juice:* In a separate bowl, whisk the egg yolks, remaining sugar, cornstarch, and orange juice until smooth and well-integrated. Gradually add half of the hot milk mixture to the egg mixture while whisking constantly for about 1 minute.
*3️⃣ Cook the Mixture:* With the milk mixture on low heat, slowly pour the egg mixture back into the pot, continuing to stir until it thickens (approximately 4 minutes).
*4️⃣ Chill the Pastry Cream:* Transfer the cream to a container and cover it with plastic wrap, making sure the wrap touches the surface to prevent a skin from forming.
