One-Pan Italian Chicken, Potatoes & Green Beans

“There were no leftovers.” That pretty much says it all! This easy, dump-and-bake dinner is the kind of no-brainer meal you’ll find yourself making on repeat. It’s flavorful, filling, and only takes minutes to prep—just toss everything in a pan, bake, and boom—dinner is served!
With tender chicken, buttery herbed potatoes, and savory green beans, it’s a complete one-pan meal that will leave everyone asking for seconds (if there are any left!).
Ingredients
- 2–3 chicken breasts, cubed
- 3–5 small to medium potatoes, chopped (Yukon golds or reds work great!)
- 1½ to 2 cans green beans, drained (or fresh if you prefer)
- 1 packet dry Italian dressing mix
- 1 stick (½ cup) butter, melted
Instructions
1. Preheat Oven
Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch baking dish or sheet pan.
2. Layer the Ingredients
Place the cubed chicken on one section of the dish, chopped potatoes in the middle, and green beans on the other side. Keep them in neat rows or toss them together—it’s up to you!
3. Season
Sprinkle the dry Italian dressing mix evenly over everything.
4. Butter It Up
Drizzle the melted butter over the whole pan, coating all the ingredients generously.
5. Bake
Cover the dish tightly with foil and bake for 1 hour and 10 minutes, or until the chicken is cooked through and the potatoes are tender.
6. Serve
Remove the foil, give everything a little stir if you’d like, and serve hot! It’s so good, you might want to make extra next time.
Tips & Variations
- Add cheese: Sprinkle shredded Parmesan or mozzarella over the top before baking.
- Use ranch seasoning instead of Italian for a creamy, herby twist.
- Add lemon slices or zest to the chicken for a fresh flavor boost.
