mini pizza burgers

Ingredients:
- 1 lb ground beef
- ½ lb ground beef or Italian sausage
- 2 tbsp butter
- 8 oz mushrooms, thickly sliced
- ½ yellow onion, finely chopped
- 2 cloves garlic, minced
- ½ tsp marjoram
- 3 cups marinara sauce
- Kosher salt and freshly ground black pepper
- 6 English muffins
- 2 oz diced pepperoni
- 1 ½ cups shredded mozzarella cheese
Instructions:
- Cook Meat and Veggies: In a large skillet over medium-high heat, brown ground beef and sausage. Halfway through, add butter, mushrooms, and onions. Cook until meat and mushrooms are golden and onions are soft.
- Add Seasonings: Reduce heat to medium-low. Add garlic and marjoram, stirring for 1 minute. Stir in marinara sauce, season with salt and pepper, and simmer for 7-10 minutes to thicken.
- Toast Muffins: Split and toast English muffins on a foil-lined baking sheet under the broiler.
- Assemble: Divide meat mixture evenly over toasted muffins. Top with diced pepperoni and sprinkle with mozzarella.
- Broil: Place under broiler for 2-3 minutes until cheese melts. Watch closely to avoid burning.
- Serve: Enjoy immediately.
Tips:
- Marinara: Simmer to thicken as it’s thinner than pizza sauce.
- Pepperoni: Adjust quantity to taste; cut into halves or quarters.
- Toasting: Pre-toast muffins to prevent sogginess.
- Foil: Use aluminum foil under the broiler to avoid fire risk with parchment.
- Storage: Refrigerate leftovers in an airtight container for up to 3 days. Reheat in microwave at reduced power. Freeze for up to 3 months in a freezer-safe container; thaw in refrigerator before reheating.
