Millipede-Style Scalloped Potato Gratin

Inspired by viral recipes and shaped like a rolled “boudin,” this cheesy gratin is seasoned with Provençal herbs and baked until golden, creamy, and bubbling. It’s everything we love about traditional scalloped potatoes, with a fun, modern twist.


Ingredients (Serves 2–3):

  • 4 large potatoes, peeled and sliced very thin (use a mandoline if you have one)
  • 200 ml (20 cl) liquid cream
  • 1 clove of garlic, crushed
  • 100 g grated cheese (like Gruyère, Emmental, or cheddar)
  • 1 cheese spread wedge (e.g., Laughing Cow or cream cheese square)
  • 1 tsp paprika
  • ½ tsp Herbes de Provence
  • Salt and pepper, to taste
  • Butter or oil, for greasing

Instructions:

1. Prep the Potatoes

Peel and thinly slice the potatoes into paper-thin rounds using a mandoline or sharp knife.

2. Mix the Filling

In a large bowl, combine the potato slices with liquid cream, crushed garlic, paprika, Herbes de Provence, salt, pepper, and half of the grated cheese. Mix gently to coat all the slices.

3. Roll the “Millipede”

  • On a sheet of parchment paper, lay out the seasoned potato slices in a long, slightly overlapping line (like roof shingles).
  • Spread the cheese wedge over the line of potatoes, then sprinkle a bit more grated cheese over the top.
  • Carefully roll the potato line into a tight spiral or boudin-like log, using the parchment paper to help guide it.

4. Bake the Gratin

  • Transfer the rolled potato log into a greased small baking dish.
  • Sprinkle the remaining cheese on top.
  • Bake in a preheated oven at 190°C (375°F) for 35–40 minutes, or until golden and bubbling.
