Mexican White Trash Casserole

Crushed Doritos, Creamy Chicken, and Cheese Galore!
Comfort food doesn’t get more crave-worthy than this.
If you’re in the mood for something unapologetically cheesy, creamy, and packed with flavor—this is your sign. This Mexican White Trash Casserole is the kind of dish you throw together when you need something hearty, low-fuss, and guaranteed to hit the spot. Think: layers of crushed Doritos, creamy chicken or beef, melty cheese, and a spicy kick from taco seasoning and Rotel. It’s part guilty pleasure, part genius pantry dinner.
Ingredients
- 1 bag Nacho Cheese Doritos, lightly crushed (about 9–10 oz)
- 2 cups shredded cooked chicken or browned ground beef
- 2 cups shredded cheese (cheddar, Mexican blend, or pepper jack)
- 1 can (10.75 oz) cream of chicken soup
- 1 can Rotel tomatoes, undrained
- ½ cup sour cream
- ½ cup milk
- ½ packet taco seasoning (or more, to taste)
Instructions
1. Preheat & Prep
Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish.
2. Mix the Filling
In a large bowl, combine cooked chicken or beef, cream of chicken soup, Rotel (with the juice!), sour cream, milk, taco seasoning, and 1 cup of the shredded cheese. Stir until creamy and well combined.
3. Layer It Up
Spread half of the crushed Doritos in the bottom of the prepared dish. Pour the creamy meat mixture over the top and spread evenly. Sprinkle the remaining Doritos over the filling, then top with the remaining shredded cheese.
4. Bake
Bake uncovered for 25–30 minutes, or until the cheese is melted and bubbly and the edges are golden.
5. Serve & Devour
Let cool slightly before digging in. Serve with chopped cilantro, jalapeños, avocado slices, or even a drizzle of hot sauce if you like it spicy!
Pro Tips
- Swap in cream of mushroom or cream of celery if you’re out of chicken soup.
- Add a handful of black beans or corn for extra texture.
- Spice lovers: mix in a few dashes of hot sauce or a pinch of cayenne for kick.
Serving Suggestion
Pair it with a crisp salad, cold soda, or margaritas if you’re feeling festive. This dish is all about fun, flavor, and that feel-good comfort food energy!
