Mère Poulard’s Famous Soufflé Omelette

Ingredients

  • 6 fresh eggs
  • 2 tablespoons crème fraîche (or thick cream)
  • 30g (about 2 tablespoons) butter, preferably salted
  • Salt and pepper, to taste

Instructions

1. Separate the Eggs

Crack the eggs and carefully separate the whites from the yolks into two large mixing bowls.
Add the crème fraîche to the yolks and whisk until smooth and creamy. Season with a pinch of salt and pepper.


2. Whip the Egg Whites

In a clean bowl, beat the egg whites with a pinch of salt until they form stiff peaks. This will give your omelette its signature soufflé texture.


3. Start Cooking

Melt the butter in a large, heavy-bottomed skillet (a cast-iron pan works beautifully) over medium heat.
Once the butter is melted and slightly foamy, pour in the yolk mixture and spread evenly.


4. Fold in the Whites

Without stirring the yolks, gently fold the whipped egg whites into the pan using a spatula. Try not to deflate them — the goal is to keep that airy, fluffy texture. Let the omelette cook for 2–3 minutes, until the bottom is golden and the top is still tender.

Chef’s Tip: If you prefer a firmer texture, you can carefully flip the omelette, but traditionally it’s served slightly runny and soufflé-soft in the center.
