- π§ 1.25ml black pepper
- πΏ 15ml fresh parsley, chopped (for garnish)

Instructions
1. Marinate the Lamb Chops
- Make the Marinade: In a large bowl, whisk together the olive oil, minced garlic, lemon juice, red wine vinegar, oregano, thyme, rosemary, cumin, salt, and pepper.
- Marinate the Lamb: Place the lamb chops in the bowl, coating them well with the marinade.
Cover and refrigerate for at least 30 minutes β ideally 2β3 hours for the best flavor infusion!
2. Roast the Vegetables
- Preheat Oven: Set your oven to 200Β°C (400Β°F).
- Prepare the Vegetables: In a large baking dish, toss the mushrooms and cherry tomatoes with olive oil, oregano, salt, and pepper.
- Roast: Bake for 15β20 minutes, until the mushrooms are tender and the tomatoes are juicy and slightly blistered.
3. Cook the Lamb Chops
- Sear the Lamb: Heat a large skillet over medium-high heat. Add a little olive oil if needed.
- Remove the lamb chops from the marinade and sear for 3β4 minutes per side, until golden and cooked to your preferred doneness (medium-rare is about 63Β°C/145Β°F).
- Rest: Let the lamb chops rest for 5 minutes after cooking to lock in all those juices!
4. Assemble and Serve
- Arrange the lamb chops on a serving platter alongside the roasted vegetables.
- Sprinkle with fresh parsley and optional crumbled feta cheese for an extra Mediterranean touch.
- Serve warm and enjoy!
Recipe Notes
- Marinating Time: The longer the marination, the deeper the flavor! Overnight marination is even better if you have time.
- Alternative Vegetables: Try adding red onions, zucchini, or bell peppers for more color and flavor.
- Grill Option: You can also grill the lamb chops instead of pan-searing β perfect for summer barbecues!
- Leftovers Tip: Slice leftover lamb and stuff it into pita bread with roasted veggies and tzatziki for an incredible lunch the next day.
