Low Carb Bacon Cheeseburger Casserole 🍔

A savory, keto-friendly casserole packed with crispy bacon, juicy ground beef, melty cheddar, and all the flavors of a classic cheeseburger—without the carbs!
Ingredients
- ½ pound bacon, roughly chopped
- 1½ pounds ground beef
- 1 tsp seasoning salt
- 1 tsp garlic powder
- Salt & black pepper, to taste
- ½ onion, chopped
- 2 garlic cloves, minced
- 2 oz cream cheese
- 2 tbsp no-sugar-added ketchup
- 1 tbsp Worcestershire sauce
- 6 dill pickle chips, sliced
- 2 eggs
- ½ cup heavy whipping cream
- 2 cups shredded cheddar cheese, divided
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C). Lightly grease a 9×13-inch casserole dish.
- Cook the Bacon: In a skillet over medium heat, cook bacon pieces until crispy. Remove and set aside.
- Brown the Beef: In the same skillet, cook the ground beef with seasoning salt, garlic powder, onion, and minced garlic. Cook until beef is browned and onions are soft. Drain excess grease.
- Mix in Flavor: Stir in the cream cheese, ketchup, and Worcestershire sauce until fully combined and creamy.
- Assemble: Spread the beef mixture evenly in the prepared baking dish. Top with chopped bacon and pickle chips.
- Make the Egg Mixture: In a small bowl, whisk together eggs, heavy whipping cream, and 1 cup of shredded cheddar.
- Pour & Top: Pour the egg mixture over the meat. Sprinkle the remaining 1 cup of cheddar cheese on top.
- Bake: Bake for 20 minutes, or until the casserole is set and cheese is bubbly and golden.
- Rest & Serve: Let cool for about 5 minutes before slicing and serving.
