Ingredients
For the Meatloaf Layer:
- 1.5 pounds ground beef
- 1 onion, finely chopped
- 2 cloves garlic, minced
- ½ cup breadcrumbs
- ¼ cup milk
- 1 egg
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- ½ tsp black pepper
- ½ cup ketchup (for topping)
For the Potato Layer:
- 2 pounds potatoes, peeled and sliced
- ½ cup sour cream
- ¼ cup milk
- 2 tbsp butter
- 1 cup shredded cheddar cheese
- ¼ cup chopped green onions
- Salt and pepper to taste
Instructions
1️⃣ Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish.
2️⃣ Mix the Meatloaf:
In a large bowl, combine ground beef, chopped onion, garlic, breadcrumbs, milk, egg, Worcestershire sauce, salt, and pepper. Mix until just combined—don’t overwork it!
3️⃣ Layer & Bake (Part 1):
Press the meat mixture evenly into the bottom of the prepared dish. Spread the ketchup over the top as a glaze. Bake for 25 minutes.
4️⃣ Prepare the Potatoes:
While the meatloaf layer bakes, boil the peeled and sliced potatoes in salted water until fork-tender, about 15 minutes. Drain and mash with sour cream, milk, and butter. Season with salt and pepper to taste.
5️⃣ Assemble the Casserole:
Spread the mashed potatoes evenly over the partially cooked meatloaf. Top with shredded cheddar and chopped green onions.
6️⃣ Bake (Part 2):
Return the dish to the oven and bake for 20 more minutes, or until the cheese is melted, bubbly, and golden.
7️⃣ Let it Rest:
Allow the casserole to rest for at least 10 minutes before slicing. This helps everything set for easier serving.
Serving Suggestions:
Pair with steamed green beans, a crisp garden salad, or roasted Brussels sprouts for a balanced, soul-satisfying meal.
