Ingredients

For the Nachos:

  • 1 large bag of tortilla chips (soft, thick-style preferred)
  • 1 lb ground beef
  • 2 cups shredded cheddar cheese
  • 1 small red onion, finely chopped
  • 1 cup green peppers, diced
  • 1 cup pico de gallo (fresh salsa)
  • 2 cups cooked rice (white or brown)
  • 1 cup sour cream
  • 1 cup mixed cream (or Mexican crema)
  • 8 oz pastrami, sliced
  • 2 cups queso cheese sauce
  • 1 cup tomato sauce
  • Optional: Fresh cilantro for garnish

Instructions

Step 1: Cook the Beef

1️⃣ In a skillet over medium heat, brown the ground beef.
2️⃣ Drain excess fat and season with salt & pepper to taste. Set aside.


Step 2: Heat the Queso

1️⃣ In a saucepan, warm the queso cheese sauce over low heat, stirring occasionally until smooth and melted.
