Lemon Ice Sponge Cake 🍋

Ingredients
For the Cake:
- 1 cup granulated sugar
- ½ cup butter, softened (room temperature)
- 2 eggs
- 1½ cups all-purpose flour
- 1½ tsp baking powder
- ½ cup milk
- Zest of 1 lemon
- Juice of 1 lemon
For the Lemon Icing:
- 1 cup powdered sugar
- 2–3 tbsp fresh lemon juice (adjust to desired consistency)
Instructions
1️⃣ Prep the Oven & Pan
Preheat your oven to 180°C (350°F).
Grease and lightly flour a loaf pan or round cake pan.
2️⃣ Make the Cake Batter
In a large bowl, cream together the sugar and butter until light and fluffy.
Add the eggs one at a time, beating well after each.
In a separate bowl, whisk together the flour and baking powder.
Gradually add the flour mixture to the wet ingredients, alternating with the milk, starting and ending with flour.
Fold in the lemon zest and juice until fully incorporated.
3️⃣ Bake the Cake
Pour the batter into the prepared pan.
Bake for 30–35 minutes, or until a toothpick inserted into the center comes out clean.
Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
4️⃣ Make the Lemon Icing
In a small bowl, whisk together the powdered sugar and lemon juice, starting with 2 tablespoons and adding more if needed. The icing should be thick but pourable.
5️⃣ Ice the Cake
Once the cake is fully cooled, drizzle the lemon icing over the top, letting it gently run down the sides.
Let the icing set and harden before slicing and serving.
