Lemon Herb Chicken

This Lemon Herb Chicken Thighs recipe features juicy, golden-brown chicken thighs marinated in a zesty lemon-garlic-herb sauce and cooked to perfection. Perfect for a quick weeknight meal or a special occasion! 

Ingredients: 

For the Chicken: 

– 6 bone-in, skin-on chicken thighs (or boneless if preferred!) 

– 2 tbsp olive oil 

– 1 tbsp butter (for extra crispiness!) 

For the Lemon Herb Marinade: 

– 3 tbsp olive oil 

– 2 tbsp fresh lemon juice 

– 1 tbsp lemon zest 

– 3 cloves garlic, minced 

– 1 tsp dried oregano (or 1 tbsp fresh!) 

– 1 tsp dried thyme (or 1 tbsp fresh!) 

– ½ tsp dried rosemary (or 1 tsp fresh!) 

– 1 tsp paprika (adds warmth!) 

– ½ tsp red pepper flakes (optional, for heat!) 

– 1 tsp salt 

– ½ tsp black pepper 

For Garnishing: 

– 2 tbsp fresh parsley, chopped 

– Extra lemon slices, for serving 

Instructions: 

1. Marinate the Chicken 🍋 

1. In a bowl, whisk together olive oil, lemon juice, lemon zest, garlic, oregano, thyme, rosemary, paprika, red pepper flakes, salt, and black pepper. 

2. Place chicken thighs in a large bowl or ziplock bag, and pour the marinade over them. 

3. Toss to coat, cover, and marinate for at least 30 minutes (or up to 8 hours for deeper flavor). 

2. Cook the Chicken (Skillet Method) 🔥 

1. Heat 2 tbsp olive oil in a large skillet over medium-high heat. 

2. Add chicken thighs skin-side down and cook for 5-7 minutes, until skin is golden and crispy. 

3. Flip the chicken, reduce heat to medium, and add 1 tbsp butter to the skillet. 

4. Cook for another 7-10 minutes, or until the internal temperature reaches 165°F (75°C). 

3. (Optional) Oven Method 🔥 

1. Preheat oven to 400°F (200°C). 

2. Heat olive oil in an oven-safe skillet over medium-high heat. Sear chicken thighs skin-side down for 5 minutes. 

3. Flip and transfer the skillet to the oven. Bake for 15-20 minutes, until fully cooked. 

4. Serve & Enjoy! 😋 

– Sprinkle with fresh parsley and serve with lemon slices. 

– Enjoy with roasted potatoes, rice, or a fresh salad!
