Lemon Fish with Butter Sauce

Ingredients:
- 4 white fish fillets (haddock, cod, or your favorite)
- 2 lemons (1 for juice, 1 for slices)
- ¼ cup unsalted butter
- 2 tbsp olive oil
- 3 cloves garlic, minced
- ¼ cup chicken broth
- 2 tbsp fresh parsley, chopped
- Salt and pepper, to taste
- Lemon slices, for garnish
Instructions:
1. Prep the Fish
Season the fish fillets with salt and pepper. Squeeze the juice of one lemon over the fillets and let them marinate for 10 minutes while you prepare the other ingredients.
2. Cook the Fish
Heat olive oil in a large skillet over medium-high heat. Add the fish fillets and sear for 3–4 minutes per side, or until golden brown and cooked through. Remove from the pan and set aside.
3. Make the Lemon Butter Sauce
In the same pan, lower the heat and add the butter. Once melted, stir in the minced garlic and cook for 1–2 minutes until fragrant and lightly golden.
4. Deglaze and Reduce
Pour in the chicken broth and juice of the second lemon. Let the sauce simmer gently for 3–4 minutes, stirring occasionally, until slightly reduced and glossy.
5. Return Fish to Pan
Place the cooked fish fillets back into the skillet. Spoon the lemon-butter sauce over them and let them simmer together for 1–2 minutes, allowing all that citrusy goodness to soak in.
6. Serve & Garnish
Transfer the fillets to a plate, drizzle with extra sauce, and garnish with fresh parsley and lemon slices.
