Ingredients

For the Cake:

  • 4 tbsp butter, softened
  • ½ cup granulated sweetener substitute (like erythritol or monk fruit)
  • 2 eggs
  • 1 ¼ cup almond flour
  • 1 ½ tsp baking powder
  • ¾ cup sour cream
  • ¼ cup almond milk
  • 2 tsp vanilla extract
  • Pinch of salt

For the Marshmallow Filling:

  • ½ cup sugar-free marshmallows
  • 2 tbsp keto honey
  • ½ cup butter, softened
  • 2 cups powdered sweetener substitute (like powdered erythritol)
  • 2–3 tbsp heavy cream
  • 1 tsp vanilla extract

For the Chocolate Coating:

  • 1 cup sugar-free white chocolate chips, melted
  • ¼ cup sugar-free dark chocolate chips, melted

Instructions

Step 1: Make the Cake

  1. Preheat your oven to 350°F (175°C) and line a large sheet cake pan with parchment paper.
  2. In a mixing bowl, beat together the butter, sweetener, and eggs until well combined.
  3. Add in the vanilla extract, almond milk, and sour cream, and mix until smooth.
  4. Gradually add the almond flour, baking powder, and a pinch of salt, stirring until just combined. The batter will be slightly thin—don’t worry, that’s perfect.
  5. Pour the batter into the prepared cake pan, spreading it evenly. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  6. Let the cake cool completely.

Step 2: Prepare the Marshmallow Filling

  1. In a bowl, beat together the butter and vanilla extract until smooth.
  2. Add in the powdered sweetener and mix until combined. Scrape the sides of the bowl to ensure everything is well incorporated.
  3. In a separate bowl, melt the sugar-free marshmallows and keto honey together until smooth. This can be done in the microwave or on the stovetop over low heat.
  4. Stir the melted marshmallow mixture into the butter mixture, blending until fully combined.
  5. Gradually add the heavy cream 1 tablespoon at a time until the filling reaches your desired consistency. The frosting should be thick but spreadable.

Step 3: Assemble the Cakes

  1. Once the cake is completely cool, use a round cookie cutter to cut 12-15 circles out of the cake.
  2. Carefully cut each circle in half to create two layers.
  3. Spread a generous amount of marshmallow filling in between the two layers, then place the top layer back on.
  4. Place the filled cakes in the freezer for about 1 hour to set and firm up.

Step 4: Coat the Cakes

  1. Melt the sugar-free white chocolate chips in the microwave or over a double boiler. Spoon the melted chocolate over the chilled cakes, or dip them into the chocolate to coat evenly.
  2. Return the cakes to the freezer for another 30 minutes until the chocolate sets.
  3. Melt the sugar-free dark chocolate chips and use them to draw zebra-like stripes on top of the cakes, creating the signature “zebra” pattern.
