Ingredients
For the Steak:
- 2 large ribeye or New York strip steaks
- Salt & black pepper, to taste
- 1 tbsp olive oil
- 2 tbsp butter
- 2 garlic cloves, smashed
- 2 sprigs fresh rosemary or thyme
For the Loaded Baked Potato:
- 2 large russet potatoes
- 1/2 cup shredded cheddar cheese
- 1/4 cup cooked, crumbled bacon
- 2 tbsp sour cream (optional)
- 2 tbsp chopped green onions
- Butter, salt, and pepper to taste
For the Scalloped Potatoes:
- 2 cups thinly sliced Yukon Gold potatoes
- 1 cup heavy cream
- 1/2 cup shredded Gruyère or cheddar cheese
- 1/4 tsp garlic powder
- Salt and pepper, to taste
- 1 tbsp butter (for greasing dish)
For the Asparagus:
- 1 bunch fresh asparagus, trimmed
- 1 tbsp olive oil
- Salt and pepper, to taste
- Squeeze of lemon juice (optional)
Instructions
1️⃣ Bake the Potatoes
Preheat oven to 400°F (200°C). Prick russet potatoes all over with a fork, rub with olive oil, and place on a baking tray.
Bake for 50–60 minutes, or until tender when pierced with a knife.
Slice open and fluff the insides. Top with butter, cheddar, crumbled bacon, green onions, and sour cream if desired.
2️⃣ Prepare the Scalloped Potatoes
Grease a small baking dish with butter. Layer thinly sliced Yukon Gold potatoes with cream, cheese, garlic powder, salt, and pepper.
Repeat layers until the dish is full.
Bake at 375°F (190°C) for 40–45 minutes, or until golden and bubbly on top.
3️⃣ Roast the Asparagus
Toss asparagus with olive oil, salt, and pepper on a baking sheet.
Roast at 400°F (200°C) for 12–15 minutes, until tender-crisp.
Finish with a squeeze of lemon juice, if using.
4️⃣ Sear the Steaks
Pat steaks dry and season generously with salt and pepper.
Heat olive oil in a cast iron skillet over high heat. Sear steaks for 3–4 minutes per side.
Add butter, smashed garlic, and rosemary or thyme. Baste with the melted butter for 1–2 minutes.
Transfer to a plate and let rest for 5 minutes before slicing.

Place a steak on each plate, accompanied by a fluffy loaded baked potato, a spoonful of golden scalloped potatoes, and a handful of roasted asparagus.
