Homemade Lemon Curd


Tart, Velvety, and Bursting with Fresh Citrus Flavor

If sunshine could be spooned into a jar, it would taste just like this homemade lemon curd! It’s rich, silky, and made with just a handful of simple ingredients—fresh lemons, eggs, butter, and sugar.

Whether you’re slathering it on scones, layering it in cakes, or folding it into whipped cream, this luscious lemon curd brings a pop of brightness to everything it touches.


Ingredients

  • 2 whole eggs
  • 3 egg yolks
  • ¾ cup (150 g) white sugar
  • 1 tbsp lemon zest (from about 2 lemons)
  • ⅔ cup (167 ml) fresh lemon juice (about 3–4 lemons)
  • ½ cup (113 g) unsalted butter, cold and cubed
  • ½ tsp vanilla extract

Instructions

1️⃣ Whisk the Base

In a medium saucepan (off the heat), whisk together:

  • Whole eggs, egg yolks, sugar, and lemon zest until smooth (about 1 minute).
  • Add in the lemon juice and vanilla extract, and mix again.

2️⃣ Cook Gently

Place the pan over low heat and stir continuously with a rubber spatula or whisk.
Cook slowly, scraping the bottom and sides, until the mixture thickens and coats the back of a spoon—this takes about 8–10 minutes.
(Be patient—low and slow keeps it silky and prevents scrambled eggs!)


3️⃣ Incorporate Butter

Remove from the heat and immediately stir in the cold, cubed butter.
Continue stirring until the butter is fully melted and the curd is glossy and smooth.


4️⃣ Strain & Cool

For an ultra-smooth texture, strain the lemon curd through a fine mesh sieve into a clean bowl.
Let it cool to room temperature, then transfer to jars or an airtight container.


Storage Tips

Refrigerate your lemon curd for up to 1 week.
It also freezes beautifully for up to 3 months—just thaw in the fridge overnight before using.
