  • 50g almonds
  • 60g cashews
  • 20g pistachios
  • 20g walnuts

  • 20g sesame seeds
  • 20g flax seeds
  • 20ml honey
  • 1 egg white
  • A pinch of salt

Instructions:

  1. Prep the Apricots
    Soak the dried apricots in cold water for 15–20 minutes, then finely chop.
  2. Mix the Dry Ingredients
    In a large bowl, combine the oats, chopped nuts, and all the seeds.
  3. Add Wet Ingredients
    Stir in the chopped apricots, honey, egg white, and a pinch of salt. Mix well until the mixture holds together.
  4. Shape the Cookies
    Form small cookie shapes (use a scoop or your hands) and place them on a parchment-lined baking sheet.
  5. Bake to Perfection
