Ingredients

  • 2 large flour tortillas 🌮
  • 1 lb grilled steak, thinly sliced 🥩
  • ½ cup pineapple chunks (fresh or grilled) 🍍
  • 1 cup shredded cheese (Mexican blend or sharp cheddar work great) 🧀
  • 2 tbsp olive oil 🫒
  • 2 tbsp barbecue sauce (optional, for added smokiness) 🍖
  • Fresh cilantro, chopped (for garnish) 🌿
  • Lime wedges for serving 🍋

Instructions

1. Grill the Steak

Grill or sear your steak to your preferred doneness. For best flavor, marinate beforehand in a simple mix of olive oil, lime juice, garlic, and a touch of chili powder. Once grilled, let it rest for a few minutes, then slice it thinly.

2. Build the Quesadilla

Heat a large skillet or grill pan over medium heat and brush with olive oil.
Place one flour tortilla on the skillet and sprinkle half the cheese over it.

Layer on the sliced steak, pineapple chunks, and a drizzle of barbecue sauce (if using). Sprinkle the remaining cheese, then top with the second tortilla.

3. Cook Until Crispy

Grill the quesadilla for 2–3 minutes per side, pressing gently with a spatula to get that golden crispiness and ensure the cheese melts all the way through.

4. Slice & Serve

Remove from the skillet and let rest for a minute before slicing into wedges. Garnish with chopped cilantro and a squeeze of fresh lime juice for that zesty finish!

Tips & Serving Ideas

  • Want extra char? Grill your pineapple rings before dicing them up.
  • Spice it up with a few jalapeño slices tucked inside.
  • Pair with chipotle crema, guac, or salsa verde on the side for dipping!
