*Ingredients:*

– 4 bone-in, skin-on chicken thighs (or boneless if preferred)

– 1 lb baby potatoes, halved- 4 tbsp olive oil, divided

– 5 cloves garlic, minced

– ½ cup grated Parmesan cheese

– 1 tsp dried Italian seasoning- Salt & pepper to taste- Fresh parsley, chopped (for garnish)

*Instructions:*

*1️⃣ Preheat & Prepare Potatoes:* Preheat your oven to 400°F (200°C). In a bowl, toss halved potatoes with 2 tbsp olive oil, half of the minced garlic, grated Parmesan, Italian seasoning, salt, and pepper until evenly coated.*2️⃣ Season the Chicken:* In a separate bowl, rub the chicken thighs with the remaining 2 tbsp olive oil, garlic, salt, and pepper.*3️⃣ Arrange on Baking Sheet:* Place the seasoned chicken and potatoes in a single layer on a baking sheet.*4️⃣ Bake:* Bake for 35-40 minutes, or until the chicken is golden and crispy, and the potatoes are tender when pierced with a fork.*5️⃣ Serve & Garnish:* Garnish with freshly chopped parsley and serve warm.
