- 2 large carrots, peeled and sliced
- 1 head broccoli, cut into florets
- 3 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- Fresh parsley, for garnish
Instructions
1. Roast the Vegetables
Preheat your oven to 425°F (220°C).
- Toss the halved baby potatoes and sliced carrots with olive oil, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, or until golden and fork-tender.
- Add the broccoli florets to the tray during the last 15 minutes of roasting to keep them crisp-tender and vibrant.
2. Sear the Steak Bites
- Pat steak cubes dry with paper towels and season generously with salt and pepper.
