Whether you’re using salmon, cod, tilapia, or sea bass, this method ensures your fish turns out tender and perfectly infused with sauce every single time.
Ingredients:
- Fresh fish, cleaned, scales removed, and sliced (e.g., salmon, cod, tilapia, or sea bass)
- 2–3 tablespoons oil
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 2 green onions, chopped
- 2 tablespoons soy sauce
- 1 tablespoon oyster sauce (optional for richer flavor)
- 1 teaspoon sugar
- 1/2 cup water or chicken stock
- Salt and pepper, to taste
Instructions:
1. Prep the Fish
Pat your fish dry with a paper towel and lightly season with salt and pepper.
2. Sauté the Aromatics
Heat oil in a wide pan over medium heat. Add garlic, ginger, and the white parts of the green onion. Sauté until fragrant, about 1–2 minutes.
3. Add the Sauces & Liquid
Stir in soy sauce, oyster sauce (if using), sugar, and water or chicken stock. Bring to a simmer.
4. Braise the Fish
Gently add the fish slices to the pan in a single layer. Spoon some sauce over the top. Cover and braise for 6–10 minutes, depending on the thickness of the fish, until cooked through and flaky.
5. Finish & Serve
Taste the sauce and adjust seasoning with extra soy sauce, salt, or pepper if needed. Garnish with the remaining green onion tops.
Serving Tips:
Serve hot with steamed jasmine rice, stir-fried greens, or even over noodles for a cozy, complete meal.
