📋 Ingredients

8 corn tortillas (6-inch)
1 tbsp vegetable oil
8.5 oz corn, drained
1 ½ cups shredded cooked chicken
8 oz salsa
2 tbsp taco seasoning (store-bought or homemade)
15 oz black beans, drained & rinsed
2 cups Colby Jack cheese, shredded
Fresh cilantro & diced tomatoes, for garnish


👩‍🍳 Instructions

1️⃣ Crisp the Tortillas

  • Preheat your oven to 400°F (200°C).
  • Lightly brush both sides of the tortillas with vegetable oil and place them on a baking sheet.
  • Bake for 8-10 minutes, flipping halfway, until golden and crispy.
