Delicious Calamari in a Rich Tomato and Herbs Sauce

Ingredients:
- 500 g squid, cleaned and cut into rings
- 2 tablespoons of olive oil
- 1 finely chopped onion
- 2 chopped garlic cloves
- 1 can (400 g) of diced tomatoes
- 1 tablespoon of tomato paste
- 1 teaspoon of dried oregano
- 1 teaspoon of dried thyme
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper to taste
- Fresh chopped parsley (for garnish)
Preparation:
- Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until the onion is tender and translucent.
- Add the minced garlic to the skillet and cook for 1-2 minutes more, stirring frequently to prevent scorching.
- Incorporate the diced tomatoes and tomato paste, followed by dried oregano, dried thyme, and red pepper flakes, if using. Season with salt and pepper to taste. Let the mixture simmer.
- Add the calamari to the sauce and cook for 5-7 minutes, or until tender and cooked through. Be careful not to overcook, as squid can become chewy.
- Remove from heat and garnish with fresh chopped parsley before serving.
