Delicious Calamari in a Rich Tomato and Herbs Sauce

Ingredients:

  • 500 g squid, cleaned and cut into rings
  • 2 tablespoons of olive oil
  • 1 finely chopped onion
  • 2 chopped garlic cloves
  • 1 can (400 g) of diced tomatoes
  • 1 tablespoon of tomato paste
  • 1 teaspoon of dried oregano
  • 1 teaspoon of dried thyme
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper to taste
  • Fresh chopped parsley (for garnish)
    Preparation:
  1. Heat the olive oil in a large skillet over medium heat. Add the chopped onion and sauté for 3-4 minutes, or until the onion is tender and translucent.
  2. Add the minced garlic to the skillet and cook for 1-2 minutes more, stirring frequently to prevent scorching.
  3. Incorporate the diced tomatoes and tomato paste, followed by dried oregano, dried thyme, and red pepper flakes, if using. Season with salt and pepper to taste. Let the mixture simmer.
  4. Add the calamari to the sauce and cook for 5-7 minutes, or until tender and cooked through. Be careful not to overcook, as squid can become chewy.
  5. Remove from heat and garnish with fresh chopped parsley before serving.
