Ingredients (Serves 2):

For the Chicken Wraps:

  • 2 large flour tortillas 🌯
  • 2 chicken breasts, cut into strips 🍗
  • ½ cup breadcrumbs 🍞
  • 1 egg, beaten 🥚
  • 1 tsp paprika 🌶️
  • Salt & pepper, to taste 🧂
  • 1 cup shredded cheddar cheese 🧀
  • 1 cup shredded lettuce 🥬
  • 2 tbsp ranch dressing 🥄

For the Potato Wedges:

  • 2 large potatoes, cut into wedges 🥔
  • 1 tbsp olive oil 🫒
  • Salt & pepper, to taste 🧂

For the Fresh Salad:

  • 1 tomato, diced 🍅
  • ½ cucumber, diced 🥒
  • 1 tbsp olive oil 🫒
  • Pinch of salt 🧂

Instructions:

1️⃣ Roast the Wedges

Preheat oven to 400°F (200°C). Toss potato wedges with 1 tbsp olive oil, salt, and pepper. Spread on a baking sheet and roast for 25–30 minutes, flipping halfway until golden and crispy.

2️⃣ Cook the Chicken

Season chicken strips with salt, pepper, and paprika. Dip each strip into the beaten egg, then coat in breadcrumbs. Heat 1 tbsp olive oil in a skillet over medium heat and pan-fry the chicken until golden and cooked through, about 3–4 minutes per side. Let them rest on paper towels.

3️⃣ Build the Wrap

Warm the tortillas briefly in a skillet or microwave. Layer each with shredded lettuce, crispy chicken strips, cheddar cheese, and a drizzle of ranch dressing. Roll tightly, slice in half, and set aside.

4️⃣ Toss the Salad

Combine diced tomato and cucumber in a bowl. Drizzle with olive oil and season with a pinch of salt. Toss gently to combine.

5️⃣ Plate & Serve
