These beauties are stuffed with silky vanilla custard and topped with a torched sugar crust that cracks with every bite. It’s dessert drama in the best way possible!


Ingredients You’ll Need:

For the Custard Filling:

  • 1 cup milk
  • 1/2 cup heavy cream
  • 6 egg yolks
  • 1/2 cup sugar
  • 1 tbsp cornstarch
  • 1 tsp vanilla extract

For the Doughnuts:

  • 2 cups flour
  • 2 1/2 tsp yeast
  • 1/2 cup warm water
  • 2 tbsp melted butter
  • 2 eggs
  • 1 tsp vanilla extract
  • Oil for frying

For the Brûlée Topping:

  • 1/2 cup sugar (for dusting & torching)

Let’s Make Magic:

Step 1: Make the Dreamy Custard

Heat the milk, cream, and vanilla in a saucepan until steamy (but not boiling).
In a separate bowl, whisk together the yolks, sugar, cornstarch, and a pinch of salt.
Slowly pour in the hot milk mixture while whisking constantly. Return everything to the pot and cook over medium heat, stirring until thickened.
Strain, cover with plastic wrap (press it against the surface), and chill for at least 2 hours.

Step 2: Prepare That Pillowy Dough

Dissolve yeast in warm water and let it foam for 5–10 minutes.
In a large bowl, combine flour, melted butter, eggs, vanilla, and the yeast mixture. Knead until smooth and elastic.
Cover and let rise in a warm spot for 1 to 1.5 hours or until doubled.

Step 3: Fry to Golden Perfection

Roll out your dough to about 1/2 inch thick. Cut into circles using a doughnut cutter or cookie cutter.
Heat oil to 350°F (175°C) and fry doughnuts in batches until golden brown on both sides—about 2–3 minutes per side.
Drain on paper towels and let cool slightly.

Step 4: Fill ‘Em & Torch ‘Em

Fill a piping bag with chilled custard and inject into the center of each doughnut.
Sprinkle the tops with sugar, then grab your kitchen torch and brûlée until you get that signature golden crackle!

Step 5: Serve & Devour

Let the sugar cool for a few minutes until it’s crisp. Then dig in and crack that caramel top!
