Creamy Avocado Tomato Onion Salad


This vibrant and creamy salad combines fresh avocados, juicy cherry tomatoes, and zesty red onions, with an optional addition of shredded chicken for extra protein. Tossed in a tangy mayonnaise or Greek yogurt dressing, it’s a quick, refreshing dish perfect for lunch or a light side.

Ingredients

  • 2 ripe avocados, diced
  • 1 cup cherry tomatoes, halved
  • ½ small red onion, thinly sliced
  • 1 cup cooked shredded chicken (optional)
  • 2 tbsp chopped fresh parsley
  • 3 tbsp mayonnaise or Greek yogurt
  • 1 tbsp lime or lemon juice
  • Salt and black pepper, to taste

Instructions

  1. In a large mixing bowl, combine diced avocados, halved cherry tomatoes, sliced red onion, and shredded chicken (if using).
  2. In a small bowl, whisk together mayonnaise or Greek yogurt with lime or lemon juice to create the dressing.
  3. Pour the dressing over the salad mixture.
  4. Add chopped parsley, salt, and black pepper.
  5. Gently toss until all ingredients are evenly coated.
  6. Serve immediately or refrigerate for 10–15 minutes to chill before serving.

Serving Suggestion
