When the sun’s out and the grill’s fired up, nothing cools you off quite like this Crawfish Cucumber Salad. It’s crunchy, spicy, and refreshingly tangy—perfect as a side dish for your next barbecue or a light lunch with a big glass of sweet tea. Think crisp cucumber slices, juicy cherry tomatoes, red onions, and tender crawfish tails all tossed in a bold, Creole-style dressing. Every bite is a flavor-packed party!

Ingredients

  • 2 cups cooked crawfish tails (or shrimp if you prefer)
  • 2 large cucumbers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/4 cup apple cider vinegar
  • 2 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tbsp hot sauce (optional, for heat lovers)
  • 1 tsp garlic powder
  • 1/2 tsp paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tsp Tony Chachere’s Creole Seasoning (or to taste)

Instructions

1. Prep the Veggies:

Slice the cucumbers, red onion, and cherry tomatoes and toss them into a large mixing bowl.

2. Add the Crawfish:

If you’re using pre-cooked crawfish tails, just toss them straight in with the veggies. (Make sure they’re thawed and patted dry if previously frozen.)

3. Make the Dressing:

In a small bowl, whisk together the apple cider vinegar, olive oil, lemon juice, hot sauce, and seasonings (garlic powder, paprika, salt, pepper, and Creole seasoning) until smooth.

4. Toss to Coat:

Pour the dressing over the crawfish and veggies. Toss everything together until evenly coated in that tangy, spicy goodness.

5. Chill Out:

Cover the bowl and refrigerate for at least 30 minutes. This helps the flavors soak into the veggies and crawfish.

6. Serve and Savor:

Right before serving, sprinkle on a little extra Creole seasoning if desired. Serve it cold as a side or even scoop it onto crackers or lettuce wraps!

Tips & Variations

Add More Crunch:
Toss in thinly sliced radishes, bell peppers, or even shredded cabbage for extra texture.

Balance the Tang:
Prefer a touch of sweetness? Add 1 tsp of honey or sugar to the dressing for a more balanced flavor.

Make It a Meal:
Serve over a bed of mixed greens or quinoa for a light lunch or dinner salad.

Make-Ahead Friendly:

This salad actually gets better after it sits for a bit, so feel free to prep it several hours ahead or even the night before your gathering.
